Once we know how genes increase or decrease in expression when yeast metabolism changes, how might this information be applied? Consider the fact that yeast is used in baking, brewing and as a model organism for cell and genetic research.
Knowing how the expression of genes in different strains of yeast affects the function of cellular metabolism, brewers and bakers can find the right strains to produce the best products. Yeast are model organisms for studying genes in the lab, because they are easy to contain and reproduce rapidly. Understanding how cellular metabolism is affected by gene expression in yeast can help scientists understand how metabolism is affected in other organisms.
